Noodles in spicy and sour tom yum broth
Kuay Teow Tom Yum combines the iconic flavors of Tom Yum soup with rice noodles. The spicy and sour broth is prepared with lemongrass, galangal, kaffir lime leaves, chilies and lime juice. The noodles are served in this fragrant broth with minced pork, crushed roasted peanuts, dried shrimp and fresh vegetables. Everything is topped with sugar, fish sauce and roasted chilies in oil. It is a street food version of the famous Tom Yum, more filling and nourishing.
Kuay Teow Tom Yum was born from the fusion of traditional Tom Yum soup and Thai street noodle culture. This dish became extremely popular in the 1980s in Bangkok, where street vendors began serving noodles in a Tom Yum-inspired broth. It is now one of the most requested noodle dishes at night markets.
