Description

Naem is a fermented pork sausage consumed raw, wrapped in banana leaves. Minced pork is mixed with pork rind, cooked rice, garlic and salt, then tightly packed and left to ferment for 3 to 5 days at room temperature. Lactic fermentation gives Naem its characteristic sour taste and firm texture. It is eaten as is or grilled, accompanied by fresh ginger, chilies, peanuts and green onions. It is a popular snack, often enjoyed with beer.

History & Origin

Naem is an ancestral culinary tradition from northern and northeastern Thailand. Natural lactic fermentation is a pre-refrigeration preservation method that transforms raw pork into a safe and flavorful food. Naem is often given as a gift during visits and celebrations.
