Description

Guay Jub is a soup of rice noodles rolled into tube shapes, served in a clear, heavily peppered broth. The broth is simmered with white pepper, cilantro, garlic and soy sauce. It is topped with crispy pork pieces, offal (intestines, liver, stomach), hard-boiled egg and fried tofu. The rolled noodles have a unique texture, thicker and chewier than flat noodles. It is a comforting and nourishing dish, particularly popular in Bangkok's Chinatown.

History & Origin

Guay Jub is a dish of Teochew Chinese origin, brought to Thailand by immigrants from southern China. Bangkok's Chinatown (Yaowarat) is the best place to enjoy authentic Guay Jub, where family recipes have been passed down for generations. The dish is particularly popular in the evening and late at night.
