Crispy mussel omelette with rice flour batter
Hoy Tod is a crispy mussel omelette, one of the most popular street food dishes in Bangkok. A batter of rice flour and tapioca is poured onto a hot griddle with fresh mussels and eggs. Everything is fried until the edges are ultra-crispy and the center is soft. Served with bean sprouts and a sweet chili sauce. The "Or Suan" version is softer, while Hoy Tod is intentionally crispy.
Hoy Tod is a dish of Teochew Chinese origin, adapted by Bangkok's Sino-Thai community. Hoy Tod vendors are wok artists, mastering temperature and timing for the perfect crispy texture. Yaowarat (Chinatown) and night markets are the best places to enjoy it.
