History & Origin

Ping Gai is the chicken version of Moo Ping, born in the street markets of the Northeast (Isan). While Moo Ping is ubiquitous from early morning, Ping Gai developed as an alternative for those who prefer chicken. The coconut milk and curry marinade technique is typical of Thai street food, where each vendor jealously guards their recipe.
