Kuay Teow Kua Gai is a wide noodle dish stir-fried over very high heat with chicken, eggs and soy sauce. The blazing wok cooking technique gives the noodles a characteristic smoky flavor called "wok hei". The noodles are slightly crispy on the edges and tender in the center.
