Rolled rice noodles in peppery broth with pork offal
Guay Jub is a soup of rice noodles rolled into tube shapes, served in a clear, heavily peppered broth. The broth is simmered with white pepper, cilantro, garlic and soy sauce. It is topped with crispy pork pieces, offal (intestines, liver, stomach), hard-boiled egg and fried tofu. The rolled noodles have a unique texture, thicker and chewier than flat noodles.
