Description

Laab Moo is the pork version of the famous larb, the national salad of Laos and Isaan. Minced pork is quickly cooked then mixed with lime juice, fish sauce, shallots, fresh mint, cilantro and toasted ground rice (khao khua) which adds a characteristic crunch and nutty flavor. The dish is spiced with dried chili powder. Served with sticky rice and raw vegetables, it is a balanced dish of sour, salty, spicy and herbal flavors.

History & Origin

Larb is considered the national dish of Laos and is equally iconic in Thai Isaan. The word "laab" means "luck" in Lao, making it an auspicious dish served at celebrations. The pork version is the most common in Thailand, pork being the most consumed meat in the country.
