Charcoal-grilled marinated pork neck
Kor Moo Yang is marinated pork neck grilled over charcoal, one of the most popular barbecue dishes in Thailand. Pork neck is chosen for its fat content which makes it incredibly juicy and tender after grilling. The marinade combines soy sauce, oyster sauce, garlic, cilantro, pepper and a touch of honey. The meat is slowly grilled over embers until caramelized. Served sliced with spicy jaew sauce and sticky rice.
Kor Moo Yang is a pillar of Isaan street food. Pork neck is the preferred cut for Thai grillers because the natural marbling melts during cooking, keeping the meat juicy. It is a convivial dish, often shared among friends over a cold beer.
