Grilled Isaan fermented sausage
Sai Krok Isaan is an iconic fermented sausage from northeastern Thailand. It is made of minced pork mixed with cooked rice and garlic, then fermented for 2 to 3 days, giving it a characteristic sour taste. The sausages are then charcoal-grilled until the skin is crispy and the inside is hot and melting. Served with fresh ginger, chilies, peanuts and raw cabbage. The contrast between the sourness of the sausage and the freshness of ginger is addictive.
Sai Krok Isaan was born from the need to preserve meat in the hot climate of the northeast, before the era of refrigeration. Fermentation with rice is an ancestral technique that preserves meat while developing complex flavors. Every Isaan family has their own recipe, passed down through generations.
