Smoky soup with grilled fish and tamarind
Tom Klong is a unique Thai soup with a smoky taste, prepared with shredded grilled fish. The broth is made sour with tamarind and flavored with grilled shallots, lemongrass, galangal and roasted dried chilies. The fish is first charcoal-grilled to develop an intense smoky flavor, then shredded and added to the broth. Fresh herbs (cilantro, green onion) are added when serving. Tom Klong is a traditional soup from central Thai cuisine, less internationally known than Tom Yum but highly appreciated by Thais.
